Observation (CORRECTED DURING INSPECTION): One sanitizer pail did not have Quats sanitizer
Corrective Action(s): Ensure Quats sanitizing solution is maintained at 200ppm to properly sanitize food contact surfaces. Test the solution daily to verify concentration. Pail was filled with 200ppm Quats sanitizing solution at the time of inspection.

Observation: Rodent droppings were observed at the front cash register area.
Corrective Action(s): Continue to employ the services of a professional pest control operator and follow the recommendations of the pest control operator. If infestation worsens, contact your pest control operator for additional service.

Observation: 1) Mould growth was found on the shelving units in the walk-in cooler.
2) Rodent droppings were observed by the tin cat in the front cash register area and the table area under the cash register.
Corrective Action(s): 1) Ensure shelving units are cleaned and sanitized on a regular basis to prevent potential contamination of foods.
2) Inspect facility daily and clean and sanitize areas affected with rodent droppings, Continue to monitor for pest activity.

Observation: None of the staff present at the time of inspection had their FOODSAFE Level 1 or equivalent training. This is a repeat violation.
Corrective Action(s): While facility is in operation, at least one person must have FOODSAFE Level 1 or equivalent training.

Comments

-Walk-in cooler was at 4C.
-Walk-in freezer was at -15C.
-Sandwich coolers were at 4C (both sides).
-Hot holding was greater than 60C. Meatballs area heated to greater than 74C prior to hot holding.
-Temperatures are checked and recorded daily.
-Cleaning and sanitizing carried out in the 3-compartment sink. Quats sanitizer was at 200ppm.
-Handwash station accessible and supplied with hot and cold running water, liquid hand soap, and single use paper towels.
-General food storage practices good at the time of inspection. Foods stored off the ground and protected from potential contamination.
-Washroom clean and sanitary. Handwash station supplied with liquid hand soap and air hand dryer.
