High temperature dishwasher serviced, sanitizing temp 74 C Premise is to process food in a cook serve or a cook, hot hold serve manner only as per condition of Permit to Operate. Ensure all food items are properly cooked before placing in food warmers to remain at 60 C or hotter. Food items not observed double stacked upon top of prep cooler. Food portioned in stacked bowls separated with wax paper liners. Back door kept closed. Premise cleaned conducted. Cleaning completed at time of inspection. Replacement food warmer unit provided, temp 69 C Closure Order complied with and now rescinded. Premise may re-open when ready.
