306 - Food premises not maintained in a sanitary condition [s. 17(1)]
Observation: 1. Tiles underneath frier are missing and broken pieces stored here. Recess where tiles were has a lot of build up of grease, fries and other food debris.
2. Condenser inside sundae assembly cooler is over flowing with diry water and ice. Food is stored in this area uncovered.
3. Underneath ice cooler and behind ovens have some food debris and dark stains on floor.
4. Inside milk cooler, two raw wood panels at the back appear to be molding.
Corrective Action(s): 1. Pull out equipment.
Clean up grease and maintain clean, do not let grease build up.
Replace tiles, seal around tiles.
2. Defrost the condenser and melt and remove the ice build up. Ensure this area does not over flow or use a larger tray to capture the overflow and monitor/dump occasionally. (2 days)
Cover food items stored in this area so dirty water does not enter and contaminate food. (Today)
3. Clean underneath all equipment.
4. Paint/seal/replace wood panels with cleanable, durable and smooth surfaces.

Hand wash stations fully supplied with liquid soap and paper towels in dispensers.
Employees are stationed at each section with gloves, be sure to change and hand wash as necessary.
Hot holding units >60C.
Freezers <-18C.
Fridges <4C.
Topping station clean and organized.
Sanitizer with cloths >200ppm (300ppm) Quats.
Dirty cloths are separated into a different bin. Laundry done on site.
Ice machine inside is clean, some surfaces have minor calcium build up and could be wiped down with routine weekly cleaning/maintenance.
Dishwasher chlorine 50-100ppm.
No signs of pests at the time of inspection.
Drive through window service: food items are organized and surfaces appear clean.
