Observation (CORRECTED DURING INSPECTION): Banana leaf rice wraps (suman) were left out at room temperature.
Corrective Action(s): They will still cold and moved to the cooler. Do not keep them at room temperature. As per Fraser Health's Progressive Enforcement policy, a Correction Order will be issued for repeat violations.

Comments

-Do not keep Suman, empanadas or other potentially hazardous foods at the front without temperature controls.
All coolers were < 4 C.
All freezers were < -18 C.
Empanadas were kept hot in the oven. Discussed keeping them in a warmer (>60 C, with a working thermometer).
Discussed the catering procedures.
Bleach solution was at 100 ppm.
No evidence of pests.
Dishwasher final rinse cycle reached 72 C at the plate.
The operator has taken the FoodSafe level 1 renewal course.
General sanitation was satisfactory.
