Observation (CORRECTED DURING INSPECTION): Low-temperature dishwasher registered <10 ppm chlorine and 60 deg C on plate surface during final rinse cycle. Improper dishwashing and sanitizing can allow for bacteria to survive and grow on food contact surfaces, utensils and equipment.
Corrective Action(s): -The low-temperature dishwasher registered at 50 ppm chlorine on the plate surface during the final rinse cycle after the appropriate repairs were conducted
- Ensure that all dishes that were washed today are to be washed again through the low-temperature dishwasher

Observation (CORRECTED DURING INSPECTION): Raw eggs stored in a colinder-like container above ready to eat food product in a upright glass cooler unit. This is a point of cross contamination as the cracked eggs can contaminate the ready to eat product stored directly below it.
Corrective Action(s): The raw eggs were moved to the bottom of the shelf of the upright cooler.

Observation (CORRECTED DURING INSPECTION): Cardboard observed used as a liner at the main cookline. Cardboard is not a suitable liner as it can absorb oils and allow for pest harborage.
Corrective Action(s): The cardboard was discarded at the time of inspection

Observation (CORRECTED DURING INSPECTION): Low-temperature dishwasher registered <10 ppm chlorine and 60 deg C temperature during the final rinse cycle after several runs. Improper dishwashing and sanitizing can allow bacteria to survive and grow on food contact surfaces, utensils and equipment.
Corrective Action(s): Technician was called during inspection and was able to fix the low-temperature such that it dispensed 50 ppm chlorine on plate surface during final rinse cycle.

Note: The duck held in the hot holding unit is only for display only. Duck is served above 60 deg C from the main kitchen. Operator indicated that the duck is not to be served to customers. Work order was already in place to repair the hot holding unit to ensure that the duck can be held at or above 60 deg C.
