Observation (CORRECTED DURING INSPECTION): - Trays of raw eggs were noted stored above ready to eats sheet cakes and produce in coolers. This is a repeat issue from the previous inspection.
Corrective Action(s): - Re-organize coolers so that raw eggs are stored beneath ready to eat items. Ensure safe food storage practices are adhered to.

Comments

- Premises maintained in sanitary condition
- Handsink supplied with liquid soap and paper towel *Front of wall mounted soap dispenser is damaged; although it is still functional, replace wall mounted unit or provide pump style dispenser so that it is easier to dispense soap for handwashing. This is pending from previous report. Operator to send confirmation once complete.
- All coolers were operating at acceptable temperatures (4C or colder):
- Sliding door cooler (kitchen) 4C
- Cooler (under salad display) 2C
- Sandwich line cooler 3C
- Sliding door cooler (Pepsi) 2C
- Sliding door cooler (Everest) 3C
- Coolers were supplied with thermometers
- Pasta salad and coleslaw held in bowls on ice were at 4C. Bowls were submerged sufficiently in ice so that ice level was equal to product level.
- Hot holding of potentially hazardous foods in steam table was >60C
- Chicken noodle soup 72C
- Cream based soup 66C
- Bacon 63C
- Upright freezer -12C
- High temperature dishwasher operational. Final rinse measured 75.7C at dish surface
- Bleach sanitizer solution present and in use with wiping cloths for food contact surfaces. Concentration measured 200ppm.
- Ice machine basin appears clean/maintained
- No signs of pest activity noted.
- Operator holds a valid Foodsafe level 1 certificate. Refresher course was completed in 2018.
*Tiles were mounted to section of wall adjacent to the handsink and to section of wall adjacent to drainboard/dishwasher to create a more durable surface. Gap noted beneath tile of the wall adjacent to handsink. Seal this gap to prevent moisture from entering/penetrating the wall.
*Some sections of shelving in middle counter/open cabinet in the kitchen are beginning to deteriorate. All surfaces must be maintained in good repair and in a smooth and washable condition. Operator to address/repair surfaces to ensure they are smooth and washable.
