Hot holding internal food temperatures at 60 degrees C or more.
Raw animal products not stored above ready-to-eat food.
Food items covered, with few exceptions (for example, food items that are being cooled). Ensure all food items are properly covered.
Quaternary ammonium compounds (quats) sanitizer is available in labeled spray bottles at 200 ppm. Measured quantities of quats concentrate are being mixed manually to prepare solution, dispenser is not currently in place.
Most areas noted as requiring cleaning on the previous report have been cleaned. Few exceptions--ensure remaining areas are properly cleaned.
Outstanding: Ensure that at all times, at least one staff member on duty is FOODSAFE Level 1 certified (or equivalent). Staff to register for and complete FOODSAFE Level 1 (or equivalent) as necessary to meet this requirement. To be checked at next inspection.
