Observation (CORRECTED DURING INSPECTION): No chlorine residual detected during rinse cycle of low temp mechanical dishwasher. Operator fixed the piping during inspection and 50ppm chlorine residual measured in next rinse cycle.
Corrective Action(s): Ensure that low temp mechanical dishwasher is maintained in good working order and able to dispense at least 50ppm chlorine residual during rinse cycle. Conduct regular checks.

Operator and staff on site did not have FOODSAFE Level 1 or equivalent. Second operator came during inspection and had valid FOODSAFE Level 1 (Jan 2027)
Corrective Action(s): Ensure that operator and in operator's absence, at least one staff has valid FOODSAFE Level 1 or equivalent.

Routine inspection conducted.

Temperature (coolers to be maintained at 4C or less, freezers at -18C or less, hot holding at 60C or above):
- Walk in cooler at 4C
- Prep cooler in the back kitchen at 4C
- Front freezers (x3) at -18C or less
- Prep cooler in front area at 2C

Storage:
- All food items were stored at least 6" off the floor.
- All food products were found either in original packaging or covered inside coolers.
- Chemicals and cleaners were stored separate from food preparation areas.

Sanitation & Maintenance:
- General sanitation of the facility can be improved.
- Hand wash sink was adequately stocked with hot/cold running water, liquid soap, and single-use paper towels.
- Sanitizer pail available and the concentration of bleach noted at 200ppm.

Pest Management:
- Professional pest control company conducts monthly checks.
- No visible signs of pest activity observed at the time of inspection.
- Mechanical traps were present throughout the facility.
