* Recommended installing a stainless steel splash guard/barrier ( approx 2 feet high) between the stock pot range and the hand sink to prevent contamination of foods. * Ensure to keeps cartons of raw eggs away from trays of salad greens to prevent chances of cross contamination. * Clean floor underneath the dry storage shelves ( especially behind pest control devices) to remove debris. Walk-in cooler registered 4 degrees C or colder Walk-in freezer at -20 C. All preparation coolers across from the grills registerd 4 degrees C or colder Hot holding of bacon and sausages >60 C.
