Observation (CORRECTED DURING INSPECTION): Noticed several pans of raw meat and chicken stored above ready to eat meats and vegetables. This presents a risk of contamination of ready to eat food products.
Corrective Action(s): Always store any raw meats/poultry items below ready to eat foods and vegetables. Buckets containing raw meats/chicken can be stored on the floor or only on the bottom shelves in the walk-in cooler.

* Ensure that all hot food items ( cooked chicken, teriyaki sauce, soups etc.) are maintained at 60 C or hotter after cooking. It is recommended to keep these items in
hot oven ( with keep hot settings) or in pre-heated soup warmers. Ensure to check internal temperature of all hot foods at least once a day and record on the temperature log sheet.
* Ensure that any cutting boards used for raw poultry or meats and thoroughly cleaned and sanitized in the dishwasher after every use.
