Observation: 1) A tray of cooked karage probed at 18 to 20C were left on the shelf. 2) A container of cabbage and sprout mix by the ramen station were measured to be 8C. 3) Soup stocks stored in the undercounter cooler were measured at 7-8C. 4) Raw ramen noodles were left in broken fridge. No preservatives added to ramen noodles to store noodles at room temperature.
Corrective Action(s): 1)2) Discarded karage and cabbage/sprout mix as they were above 4C. Keep food <4C or <60C, otherwise discard after lunch rush. 3)4) Maintain soups and raw ramen noodles at 4C or colder.

Observation (CORRECTED DURING INSPECTION): Multiple in use utensils (rice scoops, miso scoops etc.) were left in in room temperature water.
Corrective Action(s): Ice replenished at time of inspection. Keep in use utensils <4C or >60C.

Observation: Observed staffs drying utensils and plates using orange clothes.
Corrective Action(s): Dishware should be air dried as per FHA diagram discussed before. Do not use reusable clothes to dry dishware or utensils.

Observation (CORRECTED DURING INSPECTION): Bulk food items being dispensed in containers without handles (e.g. salt, cabbage/bean sprouts).
Corrective Action(s): Obtain scoops with handles and store the scoops vertically or outside of container to prevent hands from contaminating food.

Observation: 1)Soup stock cooler measured at 6-8C. 2) Ramen noodle cooler is broken (not turned on either).
Corrective Action(s): Repair/replace refrigeration units so they can maintain food at 4C or colder.

311 - Premises not maintained as per approved plans [s. 6(1)(b)]
Observation: 1) Observed staff boil slices of pork belly in boiling water over hot plate at bar area (no exhaust hood), then transfer the pork onto small skillet with cabbage underneath. This is a new menu item - teppan pork cabbage. 2) Observed another hot plate used in the back to cook staff lunches.
Corrective Action(s): 1) Remove teppan pork cabbage from menu immediately. Health Approval is required prior to making structural or menu changes. This new menu item requires cooking which creates grease laden vapour. The original plans was approved to have hot plates in the bar to hot hold precooked stock only, no grease laden vapour is allowed in the bar area without commercial exhaust hood. 2) Use existing stove to cook staff lunches, remove hot plate as there is no exhaust hood in the back where new hot plate is placed (by chest freezer).

Observation: Large dough mixer machine still onsite. Several stacked containers and unused equipment were stored between server area and ramen station. Also unused fan in dining room. Restaurant is crowded and needs space in the back.
Corrective Action(s): Remove dough mixer machine and any unused equipment by follow up inspection. Obtain cooling racks (add partition walls to mop sink area).

Observation: Observed a staff eating lunch in the back kitchen.
Corrective Action(s): Use the designated staff room to take lunch breaks, do not eat in the kitchen where food is prepared for the public.

*Reorganization required as produce, ready to eat food and raw food are placed in random sections of the cooler; no cross contamination observed at time of inspection but unit needs to be reorganized. Recommend FIFO storage method and separation of raw vs. ready to eat food vs. produce items.
