Observation (CORRECTED DURING INSPECTION): Ice machine in the kitchen found to be growing mildew inside the ice well, in the corner of the top ice "fender"
Corrective Action(s): discard the ice in the machine as well as in the bar, and any ice for consumption. Obtain extra ice from the casino for now.

Observation (CORRECTED DURING INSPECTION): 2/3 kitchen handsinks found to be missing liquid soap or paper towels at the time of inspection

Observation: Rodent droppings noted in the following areas;
-in the furnace room (staff room)
-in the corners of the dry storage room
-behind the bulk flour bins in the main kitchen (near mop sink)
-some hard to reach areas in the bar
-behind and along the ice machine
-under the bar in the budweiser room
this is not an exhaustive list
ALSO: grease and flies noted in the dry storage room bulk dry goods bins
Corrective Action(s): Ensure that the facility is going through a deep cleaning process.
Clean the above noted areas and sanitize, due immediately.

=Besides violations noted above, kitchen and bar handwash stations stocked with liquid soap, paper towels, and hot/cold running water
=Walk-in cooler (2C) and all other coolers measured < 4 degrees C
=Walk-in freezer (-25C) and upright freezer (-18C)
=French onion soup hot holding (61C) and gravy hot holding (71C) measured > 60 degrees C
=Low temperature dishwasher measured 100 ppm chlorine at the dish surface
=Low temperature glasswashers (1X) measured ~12.5 ppm iodine at the glass surface. Other machines were not in use at the time of inspection
=Sanitizer solution at higher than recommended concentration of lactic acid sanitizer in spray bottles, adjust the sanitizer to recommended levels
=Dedicated prep sink available for food preparation
=General sanitation was satisfactory at the time of inspection, however some cleaning required due to water back up in dry storage room corner. repair issue and clean area immediately
=General food storage practices satisfactory at the time of inspection. Foods properly stored off the floor and covered and raw meats stored below ready-to-eat foods.
=Staff hygiene satisfactory at the time of inspection; exec chef FOODSAFE certification valid to Jan 2027.
