Observation (CORRECTED DURING INSPECTION): Hot holding food items such as soup and sauces are measured around 54.2oC (soup). The knob was not at the correct position and the light did not turn on.
Corrective Action(s): Time tracking is implemeted for hot holding items. Reheat foods and place in hot holding unit. Ensure food and unit is maintained at 60oC or hotter.

3. Ensure ceiling tiles above walk-in cooler and freezer is in place.
