Observation: Observation: 1) No chlorine detected in low-chemical dishwasher.
2) Dishwasher "wash" chemical bucket empty. No back up chemical available
Corrective Action: 1) Have the dishwasher fixed in a manner that pumps out chlorine at concentration of 50-100ppm
2) Stock all dishwashing chemicals and store them separately and away from food prep/storage areas.
3) As an alternative, use 2-comp sink to wash dishes. As discussed, perform wsh and rinse in one side of the sink, and sanitize in the other side of the sink by filling the sink with 50-100ppm of bleach solution.
Ensure to test the concentration of chlorine every time new sanitizing solution is made
4) Pre-wash and sanitize all equipment and utensils using 2-comp sink.

3) Sanitize the area with 1000ppm bleach (20ml or 4 teaspoons of bleach + 1000ml of water)
4) All open food items in dry storage area voluntarily discarded (2 bowls of rice noodle, a box of onion, and a box of ginger)
