Observation (CORRECTED DURING INSPECTION): One bag of raw chicken was placed next to a bag of diced onions. Both items are cooked in soup but it is better to always store raw protein on a different shelf at the bottom away from possible ready to eat products.
Corrective Action(s): Always store raw proteins on bottom shelf away from ready to eat products.

304 - Premises not free of pests [s. 26(a)]
Observation: Mice droppings observed in hard to clean areas such as behind white chest freezer, under hand sinks and in the basement storage area. Pest control company in place and monitors once a month with service.
Corrective Action(s): Continue monitoring and controlling pest activity. Clean and sanitize areas with mice droppings and notify pest control company to address new activity.

Observation: General cleaning needed in hard to clean areas with grease and old food debris build up such as:
1. Corners and floors of kitchen under equipment and grill.
2. Long term storage equipment parts for the slicer and shelf.
3. Around and inside the walk in cooler fans.
4. Noted areas with pest activity.
Corrective Action(s): Cleaning and sanitization in these areas required in 2 weeks.

Observation (CORRECTED DURING INSPECTION): One microwave observed to be in poor condition with rust and chipped paint. This unit cannot be used anymore as it will contaminate food and cause physical hazards.
Corrective Action(s): Do not use unit and remove from premise. Replace unit if needed. Correction required this week.

Observation (CORRECTED DURING INSPECTION): Blue single use supply bags were being saved to repackage bulk food products. These bags are single use and cannot be washed and sanitized properly.
Corrective Action(s): Do not reuse single use packaging bags. Use a new one everytime and discard used ones.
