- defrost all the freezers
- wash all the food contact surfaces including cooler in the kitchen, floors and under the counters
- janitorial facility - to be reorganized and remove the boxes around this area. this sink need to be easy accessible.
- replace the missing tiles in the dishwashing area

High temperature dishwasher reached 83C at the final rinse
Bleach used as approved sanitizer ( just ensure that all wiping clothes are stored in it at all times )
Daily temperature logs are mission, need to be up to date and available on site ( copy will be provided to operator ).
