Observation (CORRECTED DURING INSPECTION): During time of inspection, handwashing station located closer to back of facility lacking paper towels

Observation: During time of inspection, the following was observed:
1) Uncovered buckets of flour stored underneath the prep/handwashing sink (no water pooling or accumulation observed underneath the sink)
2) Food was being prepped by handwashing sink and potential cross contamination can occur due to location of paper towel dispenser
Corrective Action(s): 1) Ensure that foods are kept covered, do not store products under the sink
2) Chef informed that paper towels dispenser will be moved

Observation (CORRECTED DURING INSPECTION): During time of inspection, door in storage area was observed to be open
Corrective Action(s): Ensure that all doors that lead to kitchen (from outside) remain closed as pests may use these are entry points

306 - Food premises not maintained in a sanitary condition [s. 17(1)]
Observation: During time of inspection, the following was observed:
1) Slight food debris accumulation underneath mixer
2) Fan covers in large line cooler in need of cleaning
3) Moderate grease accumulation apparent on metal slats on commercial ventilation (professional service due Dec 2016)
Corrective Action(s): 1) Under that all hard to reach areas in facility are cleaned on a frequent basis
2) Ensure that fan covers are wiped down dust accumulation removed and that covers are maintained on a regular basis
3) Ensure that staff remove metal slats and degrease and thoroughly clean

Comments

- All handwashing stations equipped with hot/cold running water, liquid soap and paper towels (except for the above noted)
- All temperatures meet health requirements:
* Line/prep coolers at 4C or below
* Stand up freezers at -18C
* Upright glass cooler at 4C
* Hot hot holding units maintaining temperatures of 60C or above
- During time of inspection, several large containers of red sauce were being cooled in ice baths, ensure to add water to ice baths
- Temperature logs kept and maintained
- All foods kept at least 6" off the floor
- Most foods kept covered/sealed with lids or plastic wrap in kitchen facility
- Bleach solution available in facility, concentration at 100-200ppm
- Low temperature dishwasher available, final rinse of chlorine sanitizer at 50ppm
- No evidence of pests detected during time of inspection
- General sanitation - OK, continue to focus on hard to reach areas
