Observation: Food in cooler #3 slightly high at 5C to 6C both in the inserts and the under counter box. Chef advised that the refrigeration technician missed a weld when repairing and is now waiting for parts.
Corrective Action(s): .
Written logs are to be maintained showing when food was placed in the cooler, until such time as the cooler can maintain food at a maximum of 4C foods should not be kept in this unit more than two hours, any potentially hazardous foods over 4C for greater than two hours to be discarded.
