Corrective Action(s): Ensure to cover all opened food products after using to prevent contamination and attraction of pests.

Observation: Found food build up in hard to reach areas under and between shelving and equipment along cooking line, especially where the floor meets the wall.
Corrective Action(s): A deep cleaning of the floor is required throughout the kitchen to remove all food debris and grease, and such cleaning is completed on a regular basis to prevent grease and food build up in the future.

Comments

- Coolers were 4 C or colder
- Freezers were - 18 C or colder
- Hot holding was 72 C
- Hand sinks had liquid soap, paper towel, hot and cold water
- Spray bottles had 200 ppm quat
- Dishwasher had a final rinse of 77 C at plate and 86 C at gauge after a couple of runs
- no signs of pest activity noted during inspection
- temperature logs are being used, however, make notes on corrective actions when temperatures are higher then they should be.
- Test strips are available for checking sanitizer concentrations.
