Observation (CORRECTED DURING INSPECTION): Back kitchen hand washing sink was blocked by a garbage can.
Corrective Action(s): Corrected during the inspection. Do not store the garbage can in front of the sink.

210 - Food not thawed in an acceptable manner [s. 14(2)]
Observation: Over 10 packages of prawns had been left at room temperature since this morning. This is not an acceptable method of defrosting foods. The top two packages were measured at 20 C and 12 C and were discarded. The rest were < 4 C.
Corrective Action(s): Corrected during inspection. In the future, defrost prawns in a cooler < 4 C.

Observation: Cleaning needed throughout the kitchen, including, but not limited to the following areas:
-The ventilation hood.
-Underneath the cook line, refrigerators, equipment and tables.
-Inside the 2- door cooler.
-Cooler and hand washing sink handles
-Storage containers
-The storage room needs cleaning and re-organization.
Corrective Action(s): 1 week.

Observation: a) Back hand washing sink is leaking.
b) The "roll" prep cooler and the 2-door kitchen cooler is leaking inside.
Corrective Action(s): a) Fix within one week.

Ensure that pest control reports are kept on site.

Hand sinks were supplied with hot and cold water, soap and paper towels.
All coolers were < 4 C.
All freezers were < -18 C.
Hot held foods were > 60 C.
The dishwasher reached > 71 C at the plate level.
Chlorine sanitizer solution was measured at 100 ppm.
No evidence of pests.
General sanitation was satisfactory.
