210 - Food not thawed in an acceptable manner [s. 14(2)] Observation: Over 10 packages of prawns had been left at room temperature since this morning. This is not an acceptable method of defrosting foods. The top two packages were measured at 20 C and 12 C and were discarded. The rest were < 4 C. Corrective Action(s): Corrected during inspection. In the future, defrost prawns in a cooler < 4 C. Violation Score: 5 306 - Food premises not maintained in a sanitary condition [s. 17(1)] Observation: Cleaning needed throughout the kitchen, including, but not limited to the following areas: -The ventilation hood. -Underneath the cook line, refrigerators, equipment and tables. -Inside the 2- door cooler. -Cooler and hand washing sink handles -Storage containers -The storage room needs cleaning and re-organization. Corrective Action(s): 1 week. Violation Score: 15 308 - Equipment/utensils/food contact surfaces are not in good working order [s. 16(b)] Observation: a) Back hand washing sink is leaking. b) The "roll" prep cooler and the 2-door kitchen cooler is leaking inside. Corrective Action(s): a) Fix within one week. b) Fix both within two weeks. Violation Score: 3

Comments

Follow up inspection will take place in one week. Ensure that pest control reports are kept on site. Hand sinks were supplied with hot and cold water, soap and paper towels. All coolers were < 4 C. All freezers were < -18 C. Hot held foods were > 60 C. The dishwasher reached > 71 C at the plate level. Chlorine sanitizer solution was measured at 100 ppm. No evidence of pests. General sanitation was satisfactory.
