Observation (CORRECTED DURING INSPECTION): (Repeated violation) Observed a container of partially cooked prawn tempura and sweet potato tempura. The batch was cooked less than an hour ago. It was relocated to a cooler at this time.

Observation (CORRECTED DURING INSPECTION): Miso soup's internal temperature was measured at 41C. This batch was prepared >3 hours ago. Miso soup discarded due to time and temperature abuse.

Observation (CORRECTED DURING INSPECTION): Observed an in-use utensil (rice scooper) stored in a murky water. Rice scooper was removed at this time.

Observation (CORRECTED DURING INSPECTION): 1. Observed a carton of raw eggs (in a plastic sealed bag) stored on a shelf with vegetables stored underneath. No visible contamination observed. Eggs relocated to a bottom shelf at this time.
2. Bleach in food contact surface sanitizer was too strong and resulted in test strip bleaching out. Current sanitizer was diluted down to 100 ppm.

Observation (CORRECTED DURING INSPECTION): Small amount of raw frozen chicken and raw frozen beef were cited on top of a chest freezer. Chicken and beef were still in frozen state. They were relocated to a cooler at this time.

Observation: Observed flattened cardboard boxes lining shelves (dry storage area, by the microwave, etc.).

Routine inspection conducted:
General sanitation is adequate.
Hand washing sink is fully equipped with hot and cold running water, liquid soap and paper towels.
All coolers measured at 4C or less.
All freezers measured at -18C or less.
Hot holding (rice, terriyaki sauce, etc.) measured at 60C or higher.
General food storage practice is adequate (e.g., covered). See violation section for an exception.
High temperature dishwasher's sanitizing cycle measured at 72.2C at the plate level.
Ice machine in sanitary condition.
Auto rice spreader machine cleaning protocol reviewed.
Kitchen hood in sanitary condition, and next cleaning not due until August 2, 2022.
Customer washrooms in sanitary condition.
