Observation (CORRECTED DURING INSPECTION): Soiled dishware scattered across multiple sinks in dishwashing area, no sanitizer set-up.
Corrective Action(s): Manual dishwashing is to follow the 3 step method: left sink - warm water detergent - washing middle sink - warm water - rinsing right sink - warm water 200 ppm Quat sanitizer
All dishware is to be cleaned, rinsed, then sanitized.
Afterwards items are to be placed on shelves to air dry.
