Equipment/utensils/food contact surfaces not maintained in sanitary condition [s. 17(1)]
Observation: - Staff was skipping the sanitizing step during the three compartment manual dishwashing method. Proper drain plugs missing.
- Dirt and debris observed in the large ice machine in the back of the kitchen near the staff washroom.`
Correction: - Immediately provide proper drain plugs to fill up each compartment with detergent, water, or sanitizer, as per the three compartment dishwashing method.
- Deep clean the inside of the ice machine.

Follow up inspection to report #DSOG-CN9VR7:

- Three compartment sink available for manual warewashing. Drain plugs available to fill up the compartment with sanitizer, as per the three compartment warewashing method.
- High temperature dishwasher achieved 71C at the plate's level during the final rinse cycle.
- The leak at the bottom of the sandwich prep cooler has been fixed. No water leaks observed at the time of the inspection.
