Observation: Dishwasher is still unable to reach the sanitizing temperature of 71°C during the rinse cycle. Temperature reached 63°C at the time of inspection.
Corrective Action(s): 1. Continue to follow manual sanitizing procedures. Wash all utensils and equipment through the dishwasher, then sanitize in 100-200 ppm bleach sanitizer for 30 seconds. Air dry utensils and equipment before using.
2. Service dishwasher so it is able to reach 71°C during the rinse cycle.
