Observation (CORRECTED DURING INSPECTION): Dessert cooler is measured to be 9.2oC (air temperature). Food temperature is measured to be 10.1oC (banana cream pie); and 10.2oC (pecan pie). Temperatures are monitored and recorded.
Corrective Action(s): Foods that are placed in cooler in the morning are moved to other coolers. Foods that are in cooler overnight are discarded.

Observation: Handwashing station at main cooking line is not functioning. The faucet stopped working since Saturday (February 10, 2018). Operator indicated the plumber will come in tomorrow morning to fix it.
Corrective Action(s): Handwashing station must be functioning at all times; if it needs to be repaired it should be repaired immediately.

Observation: 1. Mice droppings noted in several areas in kitchen. Pest control company has been coming twice a month. Operator is trying proactively to combat issue.
2. Fruit flies noted around bar taps.
Corrective Action(s): 1. Remove droppings, sanitize areas, and monitor together with pest control company.
2. Clean bar taps often and clear any stagnant water to reduce fruit fly problem.
