Observation: Drain flies still observed flying around kitchen area. Food debris noted in this drain. Activity noted in this drain.
Dish pit drain and area also shows signs of activity and a build up of food debris.
Water build up on floor in prep and sink areas still noted, but improved.
Corrective Action(s): Double the frequency of treatments by Pest Control and have them target drains. Ask chemical supply company about equipment that can be used in-house to improve the application and frequency of application of floor cleaner/degreaser (foam and degreasing enzyme-based product might help.
**Increased frequency of cleaning and control applied to target breeding areas of drain flies may help break the breeding cycle.

Significant cleaning achieved both by in-house staff and contracted in services. Good!
Continue to apply monitoring and review of staff cleaning quality at the end of the day.
Provide plan to this office for construction related improvements by the end of the month, targeting January February 2018 to perform.
**Continue to detail out the areas and stations in kitchen (i.e. chopping blocks, prep cooler, upright cooler, floor below grill and wok area etc.) for cleaning schedule purposes.
