209 - Food not protected from contamination [s. 12(a)]
Observation: 1) Open bag of flour stored on a tray on the floor. Open bag of icing sugar stored on a tray in the storage room.
2) Used food gloves noted on counter and appears they are being re-used. Worker preparing crepe with hole in glove.
Corrective Action(s): 1) Store dry goods in pest proof container that can be closed tightly. Store all foods on shelving 6" off of the floor.
2) Do not re-use gloves. They are single use and must be discarded afterwards. Ensure proper handwasing practices prior to handling food. Gloves are not a replacement for handwashing.

Observation: Mouse droppings noted on the floor in the corner of the storage room.
Corrective Action(s): Clean up droppings and disinfect area. Ensure any food items are in pest proof containers and stored off of the floor. Continue to monitor for further activity. Pest Control technician on-site weekly.

Comments

-Premises appears clean and well-maintained.
-Handwashing sinks were supplied with liquid soap and paper towel.
-All coolers in food service area were 4C or colder. Thermometers present. Ensure temperatures are being monitored.
-Storage room cooler was 3C. Storage room freezer was -20C
-Gelato display freezer was -9C
-High temperature dishwasher met sanitizing temperature. Rinse cycle was 71C at dish surface.
-Bleach sanitizer solution in spray bottle and in container with wiping cloths was 100-200ppm. Test strips present to verify concentration.
-Stera sheen present for cleaning and sanitizing gelato machine.
-Operator present at the time of the inspection. Operator has foodsafe level 1
