Observation: 1) In flour area, there was a flat table top lying against the wall. When the table was moved forward, there were several spiders (some alive) and cobwebs behind it.
2) Metal work table by the back ovens has food debris caked onto it (and 3-4 small flies flying around it)
3) Icing buckets (particularly the red frosted buttercream frosting) has a lot of debris on it. This is also attracting flies.
Corrective Action(s): Clean all above mentioned areas thoroughly.

Upright cooler in kitchen by the 3 compartment sink: 3 deg C
Walk in cooler: 3.8 deg C.
All freezers are at -18 deg C or less
3 compartment sink with bleach available to sanitize
Bleach spray sanitizer in front area and in back area is at 100 ppm chlorine residual
