Observation (CORRECTED DURING INSPECTION): Old knife rack holder not removed on end of prep table. Knives stored inside all have food debris affixed. These were all removed and placed in dishwashing area to be rewashed and sanitized.
Corrective Action(s): Remove old wooden knife holder. Recommend installed either a magnetic knife holder or place clean knives into a container.

Observation (CORRECTED DURING INSPECTION): Dishwasher initially dispensing 0ppm chlorine in final rinse due to chlorine container empty.
Corrective Action(s): Rewash everything as monitoring logs not maintained since Sept 2019 and there are no chlorine test strips on site to verify concentration

Observation (CORRECTED DURING INSPECTION): Paper towel dispenser empty at kitchen hand sink. Loose paper towels temporily relocated outside dispenser. Staff on site cannot access dispenser.

Observation: All 3 microwave ovens require cleaning as all are filthy inside and out.
Cleaning required on the underside on all sheving above food preparation surfaces due to heavy food splatter build up
Floor under all cooking equipment requires cleaning due to heavy grease and food debris build up.
Grease diffusers in exhaust canopy require cleaning
Ice machine (Top side) requires cleaning due to mould build up
Cleaning required inside sandwich prep cooler.
Exterior of all food storage containers require cleaning
Shelving near back door require cleaning.
Corrective Action(s): Microwave ovens must be cleaned daily. This includes the buttons on the outside to remove build up of food debris.
Underside of shelving must be cleaned daily

Shelving is worn out in several locations in the kitchen and require replacing. Shelving must be smooth, non absorbant and easy to clean.

Seals on sandwich prep cooler are worn out and require replacing
