Items corrected since last inspection: - Proper cooling procedures of cooked foods observed as operator demonstrated better practices; tomato sauce 2C; black beans 1C. - Hot held food at display insert: meat filet, diced plain chicken, marinaded chicken were above 60C - QUAT sanitizer dispenser 200-400 ppm - Operator explained that produce slicer can be dismantled to facilitate effective cleaning. Slicer observed to be clean. ***Cleaning improved; continue to clean the shelving at the dishwashing area that store cleaned equipment. Premises maintained in a clean and sanitary manner.
