-Handwashing stations were equipped with soap, paper towels, cold/hot running water
-QUAT sanitizer spray bottles were measured at 200ppm
-Prep cooler was measured at 1°C
-Walk-in cooler was measured at 4°C or less
-No signs of pests observed at the time of inspection.

Discussed the procedure for dough
-Proofing time limit
-Time/temperature risk management
-Tagging procedures.

Observed a tray of doughs on the prep table between 9 - 18°C.

Domino's Procedure:
-Receive trays of dough and refrigerate
-Prior to used (making pizza), the trays of dough are pulled out and placed in the prep area to "take the chill off" dough.
-The consistency of doughs are examined and determined to be usable or expired.

Inspector spoke to the operators and requested detailed procedures on the expiry of doughs.
