Observation: 1. Fan covers in dairy cooler require cleaning. Dust build-up observed around this area
2. Mildew build-up observed underneath dish pit where connections are, requires cleaning
Corrective Action(s): 1. Ensure that fan covers and that area around covers are wiped down, cleaned and maintained on a regular basis
2. Ensure that area surrounding dish pit is deep cleaned and sanitized

Observation: - Operator informed that walk in cooler located beside ice machine was not working.
- Operator informed that compressor needed to be repaired/ replaced
- Staff informed that walk-in cooler observed not working at beginning of shift today
- Environmental Health Officer noted that walk-in cooler temperature was at 14C
- Potentially hazardous foods being discarded from walk-in cooler at time of inspection
- Space available in dairy walk-in cooler for cold storage
Corrective Action(s): - Ensure walk-in cooler is serviced immediately and that cold holding temperature is at 4C or below at all times
- Continue to not store potentially hazardous foods items within cooler
- Notify Environmental Health Officer when walk-in cooler is repaired

Routine inspection conducted
- All handwashing stations equipped with hot/cold running water, liquid soap and paper towels
- All temperature meet health requirement - except the above noted
* Walk in cooler #2 (dairy cooler) at 4C
* Walk in freezer at -21C
* No hot holding during time of inspection
- Low temperature dishwasher available, adequate concentration of chlorine sanitizer residual available at final rinse (at least 50ppm)
- Food grade chlorine sanitizer solution available during time of inspection, concentration at 100ppm
- Most foods observed to be covered during time of inspection, continue this practice for all food products
- No food products stored directly on floor during time of inspection
- Ice machine maintained in sanitary condition
- APNA (PCO) services facility on monthly contract
- Fly lights observed in use during time of inspection
- No evidence of rodent activity detected during time of inspection
Notes:
1. Chefs are foodsafe safe certified (expiry at 2023) - Operator required to updated Foodsafe certification
2. Buffet area will be completely replaced, done Nov 2018
