Observation (CORRECTED DURING INSPECTION): Prep cooler was at 12C at time of inspection (top compartment). Toppings (e.g. pepperoni) were probed at an internal temperature of 12C. Some pieces of dough, as well as pizza sauces, were left overnight in the cooler.
Corrective Action(s): Pizza sauces and dough were discarded at time of inspection. Toppings discarded. Do not use the prep cooler until it can consistently maintain 4C or less at all times.

Observation (CORRECTED DURING INSPECTION): Cut green peppers in a container found on the floor of the walk-in cooler, uncovered.
Corrective Action(s): Green peppers were immediately covered. Ensure that all containers are off the floor and that there is adequate separation between vegetables and raw products (e.g. raw chicken).

Observation: Prep cooler measured at an internal ambient temperature of 12C.
Corrective Action(s): Repair or adjust the prep cooler until it can reach a temperature of 4C or less. Do not place any items inside the prep cooler until it can consistently maintain this temperature (4C/40F or less). Contact the Environmental Health Officer for a follow-up inspection.

Comments

Routine inspection conducted. Facility generally maintained in good sanitary condition. The following observations were made:

1) Temperatures
- Prep cooler at 12C** (see violation code above)
- Walk-in cooler at 4C
- Beverage coolers at 4C
- Chest freezer at -25C
- Pizza hot-holder at 62C
- Temperature logs

2. Hygiene and Sanitizing
- Hand wash station adequately stocked with hot/cold running water, liquid soap, single-use paper towels
- Bleach sanitizer spray bottle (x2) properly labelled and measures 200 ppm chlorine residual
- 2-compartment sink available for ware-washing. Utensils on drain rack above the sink are in good sanitary condition
- Knives stored in knife holder stored in good sanitary condition
- Ventilation canopy is well maintained
- Dough mixer and hook in sanitary condition
- New dishwasher drying racks have been obtained as requested from previous inspection - thank you for your co-operation
- Cooler doors have been re-painted and are in much better sanitary condition compared to the last routine
- Restroom is well maintained

3. Storage
- Food products are generally stored at least 6" off the floor - good
- Food bins are covered when not in use
- Chemicals stored in designated storage area across from the mop sink
- No trays / items stored in the mop sink during this inspection - excellent

4. Pest Control
- No evidence of recent, visible pest activity noted at time of inspection
- Door is self closing

5. Administrative
- Permit posted and up-to-date
- Operator has FoodSafe 1 (expiry: September 19, 2023)

Please contact the Environmental Health Officer for a follow-up regarding the prep cooler. Do not place any items in the prep cooler in the mean-time.
