Observation (CORRECTED DURING INSPECTION):
Inside of ice machine has some mould growth. Staff proceeded to clean and sanitize inside of the ice machine at the time of inspection.
Corrective Action(s):
Ensure to follow the manufacturer's instructions for proper cleaning and maintenance of the ice machine.

Routine Inspection:

Back Area:
- Hand washing station fully equipped with liquid soap, paper towels and hot/cold running water.
- Temperatures of stand-up and under-counter coolers maintained below 4 degrees Celsius.
- Temperature of stand-up freezer maintained below - 18 degrees Celsius.
- Prep sink equipped with hot/cold running water.
- High temperature dishwasher sanitizing with 80.2 degrees Celsius at dish level after the final rinse cycle.
- 2-compartment sink available for manual warewashing. Sink plugs available.
- Concentration of QUATs sanitizer at 2-compartment sink dispenser = 200 ppm.
- Dry, equipment, cooler and freezer storage and organization excellent!

Front Area:
- Hand washing station fully equipped with liquid soap, paper towels and hot/cold running water.
- Ice machine available.
- Temperature of both under-counter coolers, top inserts of both prep coolers and the beverages cooler maintained below 4 degrees Celsius.
- Temperature of rice in hot holding unit maintained above 60 degrees Celsius.
