Observation (CORRECTED DURING INSPECTION): Various ingredients including garlic oil, eggs and mushrooms were stored at 15 to 20C in the cooler (top part of prep cooler).
Corrective Action(s): Discarded food. Ensure not to keep any cold potentially hazardous food over 4C. Ingredients such as lemons and capers can be stored here.

Observation: Owner uses the sink by cooking line to wash hands but there is no soap. Repeat.

Observation (CORRECTED DURING INSPECTION): Owner explains that he washes hands without soap when using the sink by cooking line. He explains that it is because he is pinching seasoning only.
Corrective Action(s): Hands must be properly washed with soap, rinsed then dried with paper towel.

Observation: Food such as margarine were stored on the floor of walk-in cooler. Several cooked pasta were stored in the cooler without cover. A damp towel is used to cover vegetables.
Corrective Action(s): Keep all food 6 inches off the ground (use a crate, box etc.). Cover all food when not in use, with a tight fitting lid, not towel. Use disposable paper towels instead to prevent bacteria harbourage.

304 - Premises not free of pests [s. 26(a)]
Observation: Mice droppings found in the back flooring area under shelves, and in the office corners and shelving units. Trap also collected lots of silverfish.
Corrective Action(s): Please remove mice droppings, and clean the shelving units and flooring more frequently. Discard unused paper products or store them in plastic containers.
