Observation: Build up of grease and food crumbs noticed on the equipment, in gaps between pizza prep cooler and side table, underneath the grill, on the gas lines to the deep fryer, under the dishwasher and oven.
Corrective Action(s): 1. Thoroughly clean all of the above areas and surfaces to remove food/grease build up. Cover surfaces to prevent food build-up as discussed. Cover joints between tables with aluminum tape. Even slight amount of food on the floor, equipment surfaces and legs, underneath and behind equipment could attract rodents.
2. Repair or refinish the walls behind the dishwasher, oven and hand sink so that they are easy to clean and there are no gaps or crevices where food build up could occur. Recommneded using FRP panels to finish walls in these areas. Floor wall junctions must be smooth, gap free, and easily cleanable.
3. Please forward copies of the pest control service reports.
4. Replace the broken mesh for the back screen door.
5. Ensure that back door is always kept closed to prevent entry of rodents.
6. Keep the area outside the back entrance free of cardboard, empty food containers and other debris
7. Area underneath the garbage and oil collection bins outside must be kept clean at all times.
8. Clean the old heating vents in the hallway.
9. Refinish the basebaord underneath the pop storage cooler.
(All of the above actions must be completed by Nov 10, 2019)

* Some mice droppings (old??) noticed underneath the pizza boxes storage shelf and near the back entrance door for storage area.
Clean the above areas and place mice traps.
* Ensure that food containers are not double stacked. Raw poultry and meat items must be kept separate and below any ready to eat foods.
