Observation (CORRECTED DURING INSPECTION): wiping rags were sitting in 0-50ppm chlorine, no other sanitizer is being used in the kitchen.
Corrective Action(s): Ensure to store wiping rags in 200 ppm chlorine, or spray 200 ppm quat sanitizer on surface and wipe with rag. Follow sanitizing step in the Sanitation Plan. This is a repeat offense.
