Observation (CORRECTED DURING INSPECTION): 1) Small undercounter fridge at burger dressing station was reading 6.8 Celsius. Remove perishables to a working fridge, then adjust or repair and monitor fridge. Do not use for perishables until it is able to maintain food at <4 Celsius.
2) There was no time tracking noted for room temperature inserts at time of inspection. Ensure that time tracking is carried out. Corrected.

All other fridges are < 4 Celsius and well-organized. Premise is clean. Quats and chlorine in use; Chlorine 100 ppm and quats 200 ppm. No sign of pests. Hot holding >60 Celsius. Hand sinks are stocked. Discussed grill procedures for cooking burgers.
