306 - Food premises not maintained in a sanitary condition [s. 17(1)]
Observation: Many areas in the food prep area not adequately cleaned or not cleaned often enough. These areas include but are not limited to the following:
- meat slicer, walls in food prep areas,;
- Entire dish pit area, mop sink area (floor);
- Floor in all areas;
- Dirty dishes holding area in front serving/bar area.**This area is significantly dirty.
Back storage area is overly cluttered with non-utilized equipment, boxes and containers. Organize, remove unnecessary equipment and clean up these areas.
This will be checked at reinspection date noted on report.
Corrective Action(s): Clean up the identified areas and do a better job of keeping these areas cleaner. Follow your sanitation plan better or make adjustments to it.

308 - Equipment/utensils/food contact surfaces are not in good working order [s. 16(b)]
Observation: Ceiling tiles and light fixture covers missing in kitchen area. Ceiling tiles in rear food prep area dirty and discoloured, and are in need of cleaning. Cobwebs and dust building up around duct work and ceiling tiles in kitchen area. Exposed wall in kitchen.
** Result of small fire in kitchen.
Corrective Action(s): Remove all damaged ceiling tile and replace with food grade tile. Ensure no gaps in tiles are left exposing sub-ceiling.
2) Clean ceiling tiles, especially around and near exhaust, duct work and air return.
3) Replace broken or missing light fixture covers to protect food from contamination in case of breaking glass.
This will be checked on follow-up inspection date noted on report.

Comments

Observing flies in back storage area, indicating sub-standard cleaning and food storage practices. Dirty linens again likely part of the fly attraction problem. You must secure a better way to store dirty linens to ensure it doesn't promote unsanitary conditions and attract pests.
Walk-in cooler condensation line still not properly diverted to sanitary waste as discussed. make sure this is corrected for next inspection.
Keep bean sprouts on ice or in cooler below 4 C at all times. Otherwise food storage practices better.
