Observation: The carton of egg stored on top of the make table was + 60F. Hollandaise was kept in a cup on top of the counter at ambient temperature.
Corrective Action(s): Store both items inside the fridge.

302 - Equipment/utensils/food contact surfaces not properly washed and sanitized [s. 17(2)]
Observation: 1) Dishwasher is not working. Food debris remained on the surface of the dishes after running twice. Sanitizer not detectable. 2) Using dirty clothes to wipe the cutting board.
Corrective Action(s): Service the dishwasher. Check the dishwasher with test strips daily. Ensure that it is maintained(cleaning the nozzles etc) per the manufacture's instruction. Obtain a new wiping cloth after two hours.
