Comments

-Walk-in cooler was at 3C.
-Walk-in freezer was at -13C.
-Middle island prep line was at 4C (top and bottom). One of the door seals is falling off and needs to be repaired to allow for a good seal.
-Prep line was at 4C (top and bottom). Covers are now placed on top of inserts when not in use to help maintain temperatures.
-Front service area cooler was at 0C.
-Front service area chest freezer was at -22C.
-Temperatures are checked and recorded daily.
-Chemical dishwasher had a final rinse of 100ppm to 200ppm chlorine on the dish surface (minimum 50ppm required for proper sanitizing). Test strips available on-site to verify concentration.
-Handwash stations easily accessible and supplied with hot and cold running water, liquid hand soap, and single use paper towels.
-Quats sanitizer spray bottles and pails were properly labelled and tested at 200ppm.
-Quats sanitizer dispenser was tested at 200ppm.
-Bar ice slush machine emptied for weekly cleaning and sanitizing with Quats sanitizer. Slush machine is a mix which does not contain any dairy.
-Ice machine was clean and sanitary at the time of inspection. Scoop was stored in a sanitary manner.
-General food storage practices good at the time of inspection. Foods stored off the floor and covered.
-General sanitation satisfactory. Areas to pay more attention: prep cooler door seals and front storage area under hot holding cabinet.
-Facility serviced by a professional pest control operator on a monthly basis. No signs of pests noted at the time of inspection. If staff move tin cats for cleaning, ensure tin cats are replaced with the entry hole towards the wall.
-Washrooms clean and sanitary.
*FoodSafe Level 1 certificates issued prior to July 29, 2013 expire on July 29, 2018. In order to meet the FoodSafe requirements, certificate must be not expired/valid.
