Observation: New counter top heat lamp warmer: Food items not directly under heat lamp, temp 48 - 55 C
Correction: To prevent microbial growth cooked potentially hazardous foods must be kept hot at 60 C or warmer.

Do not overstock space available below heat lamp as food items will not remain 60 C. All food items within inserts are to be directly beneath heat lamp.
Comments

Hot holding unit not in use at time of inspection. Reviewed with manager that only small, narrow food inserts that fit entirely beneath heat lamp can be used for hot holding.

Walk-in cooler 0 - 1 C, cooler was serviced by technician. Mall technician serviced HVAC system to reduce ambient kitchen temperature, kitchen temperature reduced from 37 C to 29 C.

Front prep cooler 4 C

Dry storage room - products re-organized and stored off the floor. Ensure supplier deliveries are sized and with adequate frequency to prevent overstocking of storage room.

Premise cleaning conducted.
