304 - Premises not free of pests [s. 26(a)]
Observation: There are still rodent droppings in premises (mostly in non-food prep areas), as noted on previous inspection.
Droppings observed in upstairs storage area where there are 4 freezers and many storage boxes, containers, old unused equipment. Some droppings observed by mop sink. Pest control company was on site at time of inspection and indicated that they have been doing biweekly servicing and will be sending copies of the reports. Pest control recommended increased frequency of visits.
Corrective Action(s): 1) Remove all rodent droppings from affecfted areas. Sanitize the area with a mixture of bleach and water (1000 ppm). Corrected during inspection.
2) Increase frequency of pest control visits to WEEKLY for the next 3 months. Correction order issued.

Observation: Large hole observed beside the dishwasher (back side of mop sink).
Corrective Action(s): Seal this hole immediately.

Observation: Upstairs storage area is extremely messy, with many boxes/old equipment etc. left unorganized.
Corrective Action(s): Clean and organize your upstaira storage area, as this will make it easier to identify signs of pests and correct the issue.

Routine Inspection conducted:
**correction order issued for weekly pest control visits for the next 3 months

Handsinks equipped with Hot/cold running water, Liquid soap and paper towels
Adjacent unit (where dining seating is):
-back area kitchen is only used to washing/sanitizing dishes
-no food prep/packaging is done in the back area
- walk in cooler at 3.1 deg C
-High temperature dishwasher achieved 73 deg C on rinse cycle

Main unit (where sweets/kitchen is)
-All coolers at 4 deg C or less
-All freezers at -18 d deg C or less (including the chest freezers and upright freezers in upstairs area)
-Bleach sanitizer in rag bucket at 100 ppm chlorine residual
-3 compartment sink present with bleach available in 3rd compartment at 100 ppm chlorine residual


Note: Pest control company "APC Pest Control" was on site at time of inspection. Company identified all areas where holes have been sealed and improvements had been made (ie. increases in traps). However, as there are still droppings present in premises, operator will need to increase cleaning frequency as well as increase frequency of pest control visits.
