B) Bulk bread shelving rack are missing some covers.
Corrective Action(s): A) Do not leave breads uncovered. Obtain a cover or wrap breads individually to ensure they are protected from contamination
B) Replace missing covers on bulk breads.

Comments

- Display case cooler in sandwich prep preparation area has been fixed and was at 3C at time of inspection
- Discussed process to permit the sale bulk bocconcini cheese: Container of cheese is opened and placed inside a box that made of smooth, washable material that has a self closing lid. Long handle ladles with sufficient length are stored in the cooler unit for customers to dispense the cheese. Each container of cheese is turned over within the day, sometimes twice a day as per the manager. Manager said that the cooler unit temperature is monitored and that the bulk food is monitored by staff. The original containers of cheese are never reused and the protective box and ladels are manually ware washed daily.
- New updated procedures with clear cleaning, washing, rinsing, sanitizing (with appropriate contact time) and air drying procedures were posted at time of inspection.
- Employee belongings/lunches were not stored with foods being sold/intended for the public at time of inspection
