Observation (CORRECTED DURING INSPECTION): Spray bottle in deli/cheese cutting room measured 0ppm quats and is almost empty. Sanitizer bottles of quat should be maintained at 200ppm
Corrective Action(s): Refill quat spray bottle with 200ppm quat. Ensure all processing/cutting rooms contain sanitizer available for use. Date to be corrected: today

Observation: Back undercounter cooler in butcher room is unplugged and is only stored with spices. The metal racking inside has rusted and food debris has built up inside that needs to be cleaned up.
Corrective Action(s): Remove rusted shelving and clean and sanitize encrusted food debris inside the counter compartment. Date to be corrected: today

Observation: Sink in the front corner of the butcher room does not provide hot water. Measured at around 10-17C. Hot water must be provided at all handwashing sinks at around 38C.
Corrective Action(s): Use the other sink in the corner until the hot water can be provided at this handwash sink. 38C must be achieved for the hot water at the handwash sink. Date to be corrected: today

Comments

-Routine Inspection
-Handwash sinks contain hot water, liquid soap, and paper towel. Ensure garbage bins are accessible for discarding the paper towels.
-Coolers measured 4C or less: 5 stand up coolers by deli, all undercounter deli cooler, aging room, walk in
-Ambient room temperatures of butcher and cheese were 10C.
-Freezers measured -18C: 2 walk in freezers
-Pest control in place. Reports are available and continue to follow their recommendations.
-Reminder to inspect incoming shipments for pests
-Quat dispenser 200ppm quats
-3 compartment sink available and equipped in butcher room
-2 equipment, stored in warehouse not in use at time of inspection, were in a clean and sanitary condition
-Foods are not stored on the floor
-Note: past reports indicate updated floor plans are required. Send updated floor plans to district Environmental Health Officer as soon as possible. These will need to be verified as sink location and numbers were altered.
