Observation:
The exhaust canopy service sticker indicates cleaning should of been done in January 2019. The accumulation of grease and food in the exhaust canopy of vents will attract pests and is a fire hazard.
Corrective Action(s):
Call a professional company to clean the exhaust canopy.

Comments

A routine inspection was conducted, the following observations were made:
- Coolers 4C or colder; freezers -21C or colder; hot holding units above 60C; and thermometers present.
- High temperature dishwasher rinse cycle was 76.3C, at the plate's surface as per max/min thermometer.
- Bleach sanitizer in cloth buckets and spray bottles had [Cl2] of 200ppm.
- Hand sink stocked with liquid soap, paper towels, and running hot and cold water.
- Foods stored in food grade containers; covered; labeled; stored in groups with proteins stored separately from RTE foods; and stored 6" off the floor on shelves or racks.
- No expired foods in use or for sale. FIFO rules being followed.
- General sanitation level is being maintained and is good. Address the mentioned violation.
- Floors under all equipment, shelves and racks is clean and no items are being stored on the floor. All racks and shelves are clean. All walls and ceiling tiles are clean.
- No signs of pests.
- The back door was closed. The back door has a screen door installed on it.
- FoodSafe certified staff present.
