Upright cooler registered 6 C at the time of inspection. Repair or adjust so that it maintains 4 C or below at all times. (Immediately)

*Hot soup in the hot holding unit registered 98.1 degrees C. (TOO HOT). Once cooked to > 80 C soups must be transferred to a pre-heated
hot holding unit (soup warmer) and held at 60 C (140 F) or hotter. A separate hot holding unit required so that hot held soup is not overheated.

* Provide plexiglass sheet on the wired rack storage shelf above the triple sink (By June 4, 2016
