Observation (CORRECTED DURING INSPECTION): Rice is cooked each night for the next day, held in the fridge overnight and then cold rice is placed in the rice cooker for reheating and hot holding.
Corrective Action(s): Rice cookers are not designed for reheating. Do not reheat cooked rice in a rice cooker.
Rice that you have just cooked can remain in the rice cooker until service.
Staff will no longer be making rice the night before.
Follow the Food Safety Plan. Keep a copy on site.

Observation (CORRECTED DURING INSPECTION): Top section of front/prep cooler has potentially hazardous foods stored between 4-8 C.
Corrective Action(s): Food must not be above 4 C. Staff were instructed to use up the ingredients in the next 2 hours.
**Until cooler is repaired and able to maintain a temperature of 4 C or below, document when food was pulled out and use for a maximum of 2 hours.

Observation (CORRECTED DURING INSPECTION): Previously cooked rice in rice cooker ranged from 25 C to 40 C - rice was not reheated to 74 C

Routine Inspection
-Handwashing sinks equipped with hot/cold running water, liquid soap and single-use towels. *Fix the dripping faucet in the back hand sink.*
-Walk in freezer at - 18 C
**Walk in cooler was at 7.5 C however, internal temperature of potentially hazardous foods was at 4 C or below. Staff stated cooler was being opened and closed in order to prep for lunch rush. Ensure temperature drops to 4 C or below in the next hour. Temperature was dropping towards the end of the inspection.
-Temperature records available.
-Grill cooler drawers at 4 C or below.
-3 compartment sink - sanitizer in 3rd compartment registered at 400 ppm Quats.
-Sanitizer spray bottle filled with 400 ppm Quats.
-Staff have FOODSAFE Level 1 training or equivalent.
