Observation: -One tray of steamed cabbage was being stored on top of hot holding unit. Tempearture was 40.4C
-Steamed vegetable buns were being held at room temperature. Temperature of buns was 24.9-25.3C
Corrective Action(s): Potentially hazardous food must be stored at 60C or higher (or refrigerated at 4C or cooler). Discontinue the practice of storing potentially hazardous food at room temperature or not properly placed in hot holding unit. Do not heat/cook excess food for which there is not adequate capacity in the hot holding unit.

Comments

-General sanitation was satisfactory although some minor food debris and dirt noted in corners and hard to reach areas. Ensure the detail of cleaning is increased in these areas.
-Handwashing sink supplied with liquid soap and paper towel
-Sliding door cooler was 4C
-Under counter cooler was 4C Thermometer present.
-Food stored in hot holding unit was >60C
-Bleach present for sanitizing food contact surfaces
-No signs of pest infestation noted. Traps present for monitoring.
