Comments

*Follow-up to inspection conducted on September 12, 2018 (Report #MLOO-B4JPR5)

- New high temperature dishwasher was obtained (Stero SU-H, NSF Certified)
- Final rinse temperature reached 75C at the plate level
- Start keeping dishwasher logs from now on. Obtain a waterproof thermometer with min/max function to verify the dishwasher temperature. Measure the temperature at least twice per day (before lunch and before dinner). Verify the temperature is minimum 71C. Ensure the detergent and rinse aid are being drawn by the dishwasher.
- Wash all equipment in the dishwasher. Manual dishwashing allowed temporarily when the dishwasher is not working.

Thank you for your effort on these improvements.
